Egg White Muffin Cups

Egg white muffin cups

Yield 12 muffins (2 cups is one serving)


  • 3 cups egg white
  • 8 oz mushrooms, sliced
  • 1 package fresh baby spinach
  • 1/2 cup feta cheese
  • 1 tsp olive oil


    1. Heat pan with 1 tsp olive.  Sautee mushrooms and spinach until cooked
    2. Divide mushroom and spinach mixture into 12 muffin tins coated with cooking spray
    3. Pour egg whites into each tin (1/4 cup per tin)
    4. Sprinkle feta over top of muffins
    5. Bake at 350 for 25 minutes


Note: You can season egg whites with pepper, garlic powder, onion powder or your favorite seasoning

You can also use frozen veggies or add and eliminate your favorite vegetables for variety.
